Just reading the "Good Places to Eat in Chesterfield Thread" and thought I would mention how easy it is to cure your own bacon. I was inspired by S42blue to have a go at it myself and have been doing it for many months now, in fact I have just finished packaging some I smoked over the weekend. I have been curing and cold smoking the trout I catch for a couple of years now and its mint.

Curing your own bacon is by far superior to any bacon you can buy in the shops but it does take time and patience but the rewards are worth it. You just don't have to let on to your family members you have done some because it disappears faster than Walton when we win.

Most certainly is better. And if you buy smartly it can be cheaper too.

Me too. Killing for fun is a no but I don’t have a problem for sustenance.

Very rarely happens but we show them who's boss by slaughtering any nearby sharks / polar bears / lions etc

Why do all threads get hijacked? It could been an interesting thread but now it’s about vegetarianism and now it’s holier than thou??

Curing your own meat is interesting, tasty, better provenance than the supermarket and once you have some kit cheaper. What’s holier than thou about that honestly?

I’ve no idea what your hobbies are but I certainly wouldn’t judge them like you do.

I suppose I've got a bit of a weird slant on animal abuse , when I was young used to work for my dad who was a butcher and go to the abattoir with him , ate more meat than most people in their lives as we ate what he didn't sell , went veggie over 30 year ago and been vegan now for a few years .

I 100% have no issue with anyone who is vegetarian or vegan or whatever they choose to be and I would never publicly try to intimidate or embarrass them for what they choose to do. Sadly that doesn't work the other way round as you demonstrated above but I can live with it.

When I fish for trout I only fish for the table if I have none left at home and I dispatch what I catch otherwise I catch and release. The most I can catch and dispatch depends on the fishery but its mostly a limit of 3-4 fish between 2 and 4lbs.

Curing trout, like bacon is a simple process once you know how to do it and the benefits, particularly with bacon are excellent. For balance, I also cold smoke garlic, cheese and rock salt.

Try low and slow cooking bulbs of garlic. Then pop that sweet goodness on some good bread. Oh my.
